Brew City Bloody Mary Soup

After several attempts at making a proper Brew City Bloody Mary soup, this is what I came up with.  As most Bloody Mary drinkers know, recipes vary drastically so by all means do your own thing according to your taste.

This makes for a great hangover meal, but mind you, don’t cook this if you’re still drunk from the night before.  A two foot flame shooting out of your sauce pan can not only singe hair but also burn your face off.

  • Some oil – grapeseed or vegetable oil (any with high heat index)
  • 1 sack of white pearl onions peeled – http://startcooking.com/blog/202/How-to-Peel-Pearl-Onions
  • 2-3 stalks of celery chopped on angle
  • 1 onion minced (optional)
  • 3 cloves garlic minced
  • 2 cups vegetable broth at double potency– I use Better Than Bullion or Knorr
  • 1 cup of vodka (another half cup can be added upon finish for adults)
  • ½ cup of beer – Local stout but any beer will work
  • 6-8 cups of tomato juice
  • Hot sauce – Tabasco is tradition but I like Cholula
  • Black pepper
  • 2 tbsp of Worchester sauce – Soy sauce/Liquid Aminos with some brown sugar is a good substitute — I like to make my own sauce personally
  • 1 tbsp of lemon juice
  • ¼ cup olive brine
  • Any Bloody Mary garnishes one desires – Olives, asparagus, celery, et cetera.
  1.  Heat oil on high.  Sautee onions and celery on high for 5 minutes or until soft and slightly brown.
  2. Throw in garlic wait 30 seconds then pour in the cup of vodka.
  3. Flambé until flame is out.  Careful, this can be dangerous but is not hard to do.  It is key to cooking this recipe though.  (note the adjectival use of ‘key’)
  4. Pour in the beer and reduce for a few minutes.  Drink the rest of the opened beer while you wait.
  5. Add broth, lemon juice, olive brine,  Worchester sauce, tomato juice
  6. Simmer to incorporate flavors.
  7. Add hot sauce and salt to taste (shouldn’t need salt because of the brine and broth).  If you want to have an alcoholic dish, add more vodka now, but be careful, too much vodka will ruin the flavor of the whole dish.
  8. Crack some black pepper on the surface and garnish.
  9. Serve with beer.
